"Some of the best memories we shared with those we have lost have been over great food. This recipe was brought to America from County Mayo, Ireland by my late Mother-in-Law, Anne Keenan. I hope your family enjoys it as much as ours does."
Irish Soda Bread
3 cups flour
1 cup sugar
Pinch of salt
2 ½ teaspoons baking powder
1 ½ cups raisins
½ stick butter
Mix all the above ingredients in a large bowl
In a separate bowl whisk 1 egg and 1 cup of whole milk, then add to the above mixture
Sprinkle a little flour on the bottom of a round baking dish.
Place in oven and bake at 350° for 60 minutes
